Heat 2 tbsp of olive oil in the Pressure Cooker, using the BROWN setting. Brown the pork and onions. Add rice and lightly brown rice for about 1-2 minutes. Add chicken broth, diced tomatoes, tomato paste, salt, and pepper. Mix well.
Cover and lock lid. Turn the regulator knob to pressure and select HIGH cooking mode to cook for 13-15 minutes.
Release pressure by using the quick-release method. When the pressure has dropped, unlock and remove the lid. Serve and enjoy!
