Ingredients: 3 lbs chopped pork 2 tbsp. olive oil 1 cup long-grain white rice (uncooked) 2 1/2 cups chicken broth 2 cups diced tomatoes 6 oz can tomato paste 1/2 cup chopped onion Salt & pepper to taste Directions: Heat 2 tbsp of olive oil in the Pressure Cooker, using the BROWN setting. Brown the pork and onions. Add rice and lightly brown rice for about 1-2 minutes. Add chicken broth, diced tomatoes, tomato paste, salt, and pepper. Mix well. Cover and lock lid.
